LISBON -- Since opening three months ago, Nourish Coffee + Kitchen in the town square has seen steady business-- offering organic coffee and espresso drinks and fresh, locally sourced food.

"Our bodies do so much for us and I believe we need to take care of them and feed them with quality, nutritious food that sustains life," Nourish's website states. "Our goal is to serve you high-quality food and drinks made with fresh ingredients sourced as locally as possible. We only use what we would be comfortable using for our family."

"My goal for here was to provide healthier options," owner-operator Kenzie Kauffman said recently. "Everything is as fresh as possible. Everything is homemade."

Kauffman works at the shop with her husband and her younger sisters. Kenzie's 14-year-old sister, Rylee Weaver, bakes dessert items and has her own baking business, Ry's N Shine.

Kauffman worked and cooked at Old Towne Country Grill in Leetonia since her family opened it in 2018. For the past three years, she managed the store.

"I never had any official schooling for cooking. It's just something I grew up with. I've always enjoyed it," Kauffman said. "I love food."

She was inspired to open her own coffee and kitchen spot and provide healthier and cleaner options partly because of her own gluten intolerance and "list of things" she has to avoid when eating out.

Sourdough bread from Joe's Sourdough Bread, of Lisbon, is a prominent feature at Nourish. Because of the way sourdough bread is made, many people with gluten sensitivity can safely eat it without any issues.

There are no seed oils, no refined sugars, and no preservatives in any of the ingredients at Nourish.

Another goal of Nourish is to support other local small businesses.

"There's quite a few local places we get our food," Kauffman said. "In the summertime, I'll get all my produce local."

All the farm fresh eggs and milk come from Baker's Golden Dairy in New Waterford, microgreens come from Wholly Organic Microgreens in Brookfield Township, and the organic coffee and espresso is purchased from a small family business in Malta, Ohio-- RK Roasters.

Kauffman has combined two of her passions, coffee and cooking, right in her hometown with Nourish Coffee + Kitchen. She grew up in Lisbon, living in the village her whole life.

The shop was just an idea that she and her husband were tossing around at first, but when the location opened up in the town square, it seemed like a good fit, she said.

Kauffman and her family fixed up the inside, taking up three layers of flooring and then sanding and staining the original hardwood floor of the store.

"My family helped us with so many things and spent a lot of time in here," she said.

The menu includes many recipes that Kauffman is familiar with and "loves." Top sellers are the turkey pesto melt, breakfast sandwich, and recently, the Mediterranean bowl, harvest bowl, and breakfast bowl.

The featured soups are switched out every week and there is a different quiche daily. Desserts change every two to three days on baking days. On Tuesday, the featured desserts were caramel macchiato cheesecake from Ry's N Shine, cranberry orange scones, and a gluten-free, sugar-free, and vegan chocolate chip oatmeal cookie.

"The community has been so supportive and welcoming of us," Kenzie Kauffman said.

Nourish Coffee + Kitchen is open 7 a.m. to 3 p.m. Tuesday through Friday, 8 a.m. to 3 p.m. Saturday, and closed on Sunday and Monday.
